# Lactation Cookies

## INGREDIENTS

- `240` g old-fashioned rolled oats
- `180` g all-purpose flour
- `75` g brewers yeast
- `30` g ground flaxseed
- `1/2` tsp baking powder
- `1/2` tsp baking soda
- `1/2` tsp ground cinnamon
- `1/4` tsp salt
- `16` TBSP unsalted butter
- `300` g cane sugar
- `1` large egg + 1 large egg yolk
- `2` tsp vanilla extract
- `360` g semi sweet chocolate chips

## INSTRUCTIONS?

- Preheat the oven the 350 degrees F.
- Beat butter in mixer on high speed until light and fluffy, then beat in sugar, then egg and yolk, then vanilla extract
- Beat on high until whipped smooth
- In a large bowl, whisk together the oats, flour, yeast, flaxseed, baking powder, soda, cinnamon and salt.
- Gradually add in the dry ingredients, beating on low speed until just combined and mixed. Stir in the chocolate chips with a spatula until they are evenly dispersed.
- Make the cookies `85` g for 16 cookies
- Bake 18 min
- Scoop the dough into 1-inch rounds and place on a baking sheet about 2 inches apart. Bake for 16 minutes, or until the bottoms are just golden. Let cool completely before storing in a sealed container.
